First Harvest Squash

We had our first harvest from my little garden last night.
BQ Steak, baked potato, and garden squash....... wine and garlic bread.

Summer Yellow Squash:

(out of habit I use corning glass with lid)

1 T of cooking oil (probably not canola oil :laugh: :laugh: :laugh: )
2 T of chopped onion (any kind)
heat and brown only lightly... which means hardly

1 Medium Tomato chopped, juice and all
add to pot.. mix ....... light salt

2 Squash (1/2 foot each.... :laugh: :laugh: 6 inches will do it)
slice into thin slices (not potato chip thin)
Zucchini works well also... or mix.

add to pot..... do not mix to start..... cover and cook over
low-medium heat.
When tender........ mix and add 3 T of grated Parmesan Cheese

If you think you do not like squash you just need more exposure. :teehee:

I love squash and it is very good on the grill with parmesian cheese sprinkled on the top as well. Of course butter and brown sugar in the "well" is great too.
